try to convert workspaceEdit.documentChanges to plain changes
We do not support workspaceEdit.documentChanges but some LSP servers
do not respect our capabilities and send them anyways.
Try to optimistically convert simple documentChanges to plain changes.
We only support simple TextDocumentEdit[].
